Keeping meals healthy and simple may seem tough but I promise you can easily whip up a 5 ⭐️ dinner in minutes. This salmon and rice recipe will not disappoint

🎄 one pound wild caught salmon sprinkled with salt/pepper and brown sugar (make sure to rub a little olive oil on your pan so the salmon does not stick. You can also place it on parchment paper if you like)
Cook the salmon at 400 degrees for 20 minutes or until cooked through.
🎄In a rice cooker put one cup of long grain brown rice to 1 1/2 cups of water. Let the rice maker do its magic.

🎄 I chose to keep things simple and bought a salad kit that you just open and mix together. You can get more creative but the flavor was right for us 😉

Easy clean up too! Enjoy!

Farfalle in a vodka bolognese 🍝
We like to pack in the protein so we used @barillaus protein + pasta.

Sauté the ground meat of your choosing until almost cooked through. Drain the excess oil. Add the pasta sauce to the cooked ground meat and simmer on low until the meat is fully cooked through.
When sauce is simmering boil and cook the pasta according to directions on the box. Drain pasta and add the meat sauce together. Sprinkle shredded mozzarella cheese on top and broil until cheese is melted. Enjoy!

Recipe

Minced garlic 4-5 cloves
Olive oil
1/4 cup grated parmesan cheese
Zest and juice to 1 lemon
Pepper to taste
1tsp red pepper flakes (optional) for 🔥
Thick spaghetti or your pasta of choice

Boil spaghetti according to box.
Heat olive oil on medium to medium low heat and add the minced garlic. Let simmer for 4-5 minutes and make sure it does not burn. Add half of the parmesan cheese and pepper to taste.
Once heated through add the cooked pasta to garlic sauce. Zest and squeeze the lemon. Sprinkle the remaining cheese and red pepper flakes (optional)
Enjoy!

Loaded Baked Potato Casserole

Preheat oven to 400 degrees F
Wash and wrap potatoes in foil.
Place potatoes in the oven on a baking sheet and bake for approximately 1 hour or until a fork can easily puncture through the potato.
Remove and and let cool.

Scoop the insides of the potato in a bowl and add in 1 cup cream cheese, 1 cup sour cream, 1 cup shredded cheese of choice, 1/2 cup bacon and chives.
Mix well with a potato smasher and lay out evenly in a casserole dish.
Top with more cheese, bacon and chives.
Place in the oven and cook for 25-30 minutes or until bubbly.
Enjoy!

In a 13x9 baking dish line the bottom with mashed potatoes.
Mix together stuffing, turkey, gravy and cream of celery soup (optional).
Layer the stuffing/turkey mix on top of the potatoes.
Cover and bake for 25 minutes on 400 deg F
Remove from oven and up the temp to 450 deg F

Make bisquick biscuits according to box. (Mix +milk)
Place golf ball sized biscuits on top and and cook in oven for an additional 10 minutes or until golden brown.
Serve with more gravy and enjoy!

Simple and super quick Plant Based Meal! This is my boys fav! With @barillaus protein + and @fieldroast smoked apple and sage plant based sausages you’re getting a protein packed meal that’s super yummy.

We keep it simple, just drizzle a little EVOO salt & pepper on the spaghetti and then chop and sauté the sausage with bell pepper onion and garlic. Sprinkle parmesan cheese when you’re ready and enjoy!

Mashed potatoes made easy 🥔 - one pot

Ingredients
5 lb bag of potatoes (washed and peeled)
1 stick butter (unsalted)
2 cloves garlic minced
1 cup half and a half + 1 more cup if needed for a smoother consistency (you can use whole milk as well)
Salt and pepper
¼ cup Chives (diced)

Directions
💧 In a large pot, fill the water ¾ way full.
🥔 Place peeled potatoes in the cold water and bring to a boil. Once boiling, continue to cook for 15 minutes or until the potatoes are soft. You can use a fork to puncture and if it easily goes through then they are cooked.
🥣 Drain the potatoes carefully and place them in a large mixing bowl.
🧡Add the milk and begin to smash it together a bit so the milk begins to heat through. Sprinkle in salt and pepper to taste.
🧈 In a small saucepan, heat the butter on medium-low heat. Add the garlic and half of the chives and continue to cook for 1-2 minutes. Be careful not to burn the butter or garlic. This is to just melt and release the garlic and chive aroma.
💛Pour the butter on top of the potatoes. (Make sure the milk is mixed in and heated through before doing this step)
🪄 Using a hand mixer, blend the potatoes until your favorite consistency. You can leave them on the chunky side, or blend them fully smooth. You can add a little more milk if needed as well.
🍽️ Plate the potatoes and drizzle with olive oil and sprinkle the rest of the chives chives on top. Salt and pepper if needed.

****you can add more milk if the consistency is too thick.
****Using a dutch oven allows you to boil, mix and serve all from the same pot.
