Ingredients

  • 4 Potatoes washed
  • ½ stick butter
  • 2 tbsp olive oil
  • 2 tbsp garlic minced
  • 2-3 tbsp chopped chives
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees.
  • Place the potato on the Hasselback potato guide. Using a knife, make multiple slices down the potato. Make sure to not cut it all the way through. You want the bottom side to stay intact so the potato stays together.
  • Once all potatoes are cut, drizzle the olive oil and rub it into the potatoes.
    Salt and pepper to taste.
  • Slightly melt the butter and add the garlic, half of the chives, salt, and pepper, and mix together.
  • Pour the butter mixture over the potatoes and rub it all in, getting between the slices.
  • Cover with foil and bake for 30 minutes. Remove foil and continue to cook for 10 minutes.
  • Top with sour cream and the rest of the chives.
  • Serve warm and enjoy!
