Avocado and Egg Toast

Hollandaise Sauce

Instructions
Preheat the oven to 375°F.
Place the sliced english muffin or bread on a baking sheet and toast until crispy .
Top the toast with avocado. You can slice and place on top or you can smash the avocado and add a little lemon, salt and pepper.
Poached Egg
Fill a medium-sized pot with water, about 2-3 inches deep. Bring the water to a gentle simmer over medium heat.
Crack an egg into a small bowl. This will make it easier to add the egg to the water.
Add a pinch of salt and a teaspoon of vinegar (apple cider vinegar or white vinegar) to the water. The vinegar will help the egg whites cook properly.
Using a spoon, create a gentle swirl of water in the center of the pot. This will help the egg whites create an even shape.
Slide the egg from the bowl into the center of the water. Cook for 3-4 minutes, or until the egg whites firm and the yolk is still runny.
Use a slotted spoon to remove the poached eggs from the water onto a paper towel to absorb any water.
Place on your avocado toast.
Hollandaise Sauce
In a saucepan that is not heated, wish together the egg yolks and lemon juice until the mixture is thickened.
Place the saucepan over very low heat and continue to whisk until the mixture becomes slightly thickened.
Slowly pour the melted butter into the egg mixture whisking constantly.
Cook until the sauce is smooth and thick.
Remove the saucepan from the heat and add the cayenne pepper along with any other spices you like.
You can thin out the sauce by whisking in a few drops of warm water or lemon juice if needed.
Drizzle on top of the avocado eggs benny.
Notes
It’s very important to whisk constantly when making the hollandaise sauce to prevent the eggs from curdling.
