- 1 onion
- 1 can black beans rinsed and drained
- 1 can kidney beans rinsed and drained
- 1 can tomato sauce
- 2 cup diced tomatoes
- 1 1/2 lbs boneless skinless chicken breast
- 4 oz chopped green chili peppers
- 1/4 cup cilantro
Homemade Taco Seasoning
- 1 1/2 tbsp cumin
- 1 1/2 tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp paprika
- salt and pepper to taste
Optional
- 1/2 avocado
- 1 tbsp coconut yogurt
Instructions
Crockpot
- Add the chopped onion with a small amount of olive oil and sautee in crock pot for 2-3 minutes.
- Add the chicken and seasoning. Por 1/4 cup water over.
- Add the beans, green chili's, diced tomatoes and tomato sauce.
- Cook on high for 2 hours or on low for 4 hours.
- Remove chicken and shred a part. Place back in pot.
- Serve warm and top with cilantro.
