Choosing a ripe avocado is super important. You want it to be slightly soft to the touch. Not too hard and not too squishy. You can also check to see by removing the little nub at the top. If it’s green, then it is good to go!

Steps to Poach an Egg:
- Fill a medium-sized pot with water, about 2-3 inches deep. Bring the water to a gentle simmer over medium heat.

- Add a pinch of salt and a teaspoon of vinegar (apple cider vinegar or white vinegar) to the water. The vinegar will help the egg whites cook properly.

- 4 Eggs
- Dash Salt and Pepper
- 4 slices Bread or English muffin of choice Recipe uses Ciabatta Bread
